Honeyed Heirloom Carrots en Papillote

Is there any other way to treat an heirloom but with great respect? This sweet recipe for honeyed heirloom carrots will be sure to take center plate of any dinner. Culinary Parchment Cooking Bags remove the guess work of cooking time. Dignify your vegetables by never boiling them ever again!
Ingredients:
- 4 medium carrots, peeled and sliced ½-inch (1.25cm) thick on the bias
- 1 tablespoon (15mL) honey
- 2 tablespoons (30mL) olive oil
- kosher salt
- freshly ground pepper
Preparation Instructions:
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together honey and 2 tablespoons (30mL) olive oil.
- Add carrots to parchment bag. Pour honey/oil mixture over and season well with salt and pepper.
- Fold bag down three times to really close it, then shake bag to coat carrots with flavour. Place bag on baking sheet.
- Roast for 25-30 minutes.
- Remove from oven and let rest on stove. Carefully open the bags, but watch out for the steam! The carrots should be tender and shiny. Remove from bag and serve.
For an interesting presentation, try taking the parchment cooking bag of carrots straight from oven to table and place on a serving dish.
Choose heirloom carrots for a more colourful result.
