Braised Mushrooms with Bacon & Fresh Herbs

Ingredients:

  • 1 oz (30 gm) Oyster mushrooms cut the stems and reserve
  • 1 oz (30 gm) Shitake mushrooms cut the stems and reserve
  • 1 oz (30 gm) Portobello mushrooms cut the stems and reserve
  • 1.75 oz (50 gm) double smoked bacon cut in small squares (1" x 1/2")
  • 1 Spanish onion cut in half
  • 2 cloves of garlic
  • 2 cups (500 mL) water
  • 1 bunch of your favorite herbs

Preparation Instructions:

  • Preheat oven to 400°F (200°C)
  • Add stems from all mushrooms, onion and garlic into a pot with 2 cups of water
  • Bring to boil, then simmer until reduced to 1/2 cup, then strain
  • Brown the bacon and reserve
  • Wash all the mushrooms and then put them in Culinary Parchment Cooking Bag with the herbs, garlic, bacon and 1/2 cup of liquid from mushroom stems
  • Close the bag by folding 3 or 4 times, crimping to seal, and bake 15 minutes
  • Open bag carefully and serve

Single serving.
